Homemade chicken and wild rice soup is the perfect comfort food for a cold winter night. The warmth of the soup combined with the hearty chicken and flavorful wild rice creates a delicious and filling meal that is sure to warm you up and leave you feeling satisfied.

Chicken and Wild Rice Soup

Ingredients:

  • 4 cups of chicken broth
  • 2 cups cooked and shredded chicken
  • 1 cup cooked wild rice
  • 2 cups of diced carrots
  • 2 cups of diced celery
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • ½ teaspoon dried thyme

Instructions:

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion, carrots, celery and garlic. Sauté for 5-7 minutes, until the vegetables are softened.
  3. Add the chicken broth and bring the mixture to a boil.
  4. Once boiling, reduce heat and add the cooked wild rice, shredded chicken and season with salt, pepper and thyme.
  5. Simmer for 15-20 minutes, stirring occasionally.
  6. Serve warm and enjoy!

  • Instead of chicken, use turkey or beef.
  • Instead of wild rice, use white rice, quinoa, or barley.
  • Instead of carrots, use parsnips or sweet potatoes.
