Warm up lunch or dinner with a hearty bowl of Chicken and Wild Rice Soup
Homemade chicken and wild rice soup is the perfect comfort food for a cold winter night. The warmth of the soup combined with the hearty chicken and flavorful wild rice creates a delicious and filling meal that is sure to warm you up and leave you feeling satisfied.
Chicken and Wild Rice Soup
Ingredients:
- 4 cups of chicken broth
- 2 cups cooked and shredded chicken
- 1 cup cooked wild rice
- 2 cups of diced carrots
- 2 cups of diced celery
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- ½ teaspoon dried thyme
Instructions:
- Heat olive oil in a large pot over medium heat.
- Add the diced onion, carrots, celery and garlic. Sauté for 5-7 minutes, until the vegetables are softened.
- Add the chicken broth and bring the mixture to a boil.
- Once boiling, reduce heat and add the cooked wild rice, shredded chicken and season with salt, pepper and thyme.
- Simmer for 15-20 minutes, stirring occasionally.
- Serve warm and enjoy!

- Instead of chicken, use turkey or beef.
- Instead of wild rice, use white rice, quinoa, or barley.
- Instead of carrots, use parsnips or sweet potatoes.
