Sumac-Crusted Filet Mignon with Honey-Lemon Glazed Carrots and Garlic Mashed Potatoes

Recipe by Omaha Steaks Executive Chef David Rose
Prep time: 15 minutes
Cook time: about 20 minutes
Servings: 4

Garlic Mashed Potatoes:

  • 2          pounds russet potatoes, medium diced, skin on
  • cold water
  • 1          teaspoon kosher salt, plus 1 pinch, plus additional, to taste, divided
  • 1/2       pound unsalted butter
  • 4          cloves garlic, minced
  • 1          cup heavy cream
  • 1/2       teaspoon ground white pepper, plus additional, to taste, divided

Honey-Lemon Glazed Carrots:

  • 2/3       cup honey
  • 1/4       cup fresh-squeezed lemon juice
  • 1/2       teaspoon sumac
  • 1/4       teaspoon lemon zest
  • 2          pinches kosher salt, plus additional, to taste, divided
  • 1          pinch ground black pepper, plus additional, to taste, divided
  • water
  • 1          pound baby rainbow carrots
  • 1/3       cup olive oil
  • 1          tablespoon unsalted butter

Sumac-Crusted Filet Mignon:

  • 4          Omaha Steaks Private Reserve Filet Mignons (7 ounces each)
  • 2          tablespoons kosher salt
  • 1          tablespoon sumac
  • 2          teaspoons ground black pepper
  • 1          teaspoon dried thyme leaves
  • 1/3       cup grapeseed oil
  • 3          tablespoons unsalted butter, divided
  1. To make garlic mashed potatoes: Add potatoes to stockpot. Cover with cold water by about 1 inch and add 1 pinch salt. Turn on high heat and bring to boil 12-15 minutes, or until fork tender. Drain and place potatoes in large mixing bowl.
  2. In saucepan over medium heat, melt butter. Add garlic and simmer 5 minutes. Add heavy cream, 1 teaspoon kosher salt and 1/2 teaspoon white pepper; bring to boil. When mixture boils, reduce to simmer 3 minutes then remove from heat.
  3. Mash hot potatoes until most lumps are gone. Using hand mixer on low speed, slowly add butter and cream mixture until desired smoothness and taste.
  4. Season with salt and white pepper, to taste.
  5. To make honey-lemon glazed carrots: In small bowl, whisk honey, lemon juice, sumac, lemon zest, 1 pinch salt and 1 pinch pepper.
  6. Preheat oven to 425 F.
  7. Fill stockpot 2/3 full with water. Bring to boil and add 1 pinch salt. Blanch carrots in boiling water 5 minutes. Drain and shock with cold water. When cool enough to handle, halve carrots lengthwise.
  8. In large saute pan over medium-high heat, add oil and butter.
  9. Add carrots to pan, flat sides down, and season with salt and pepper, to taste. Sear until browned, about 2 minutes.
  10. Flip carrots and season with salt and pepper, to taste. Add half of glaze to pan and glaze generously. Bake 3 minutes. Add remaining glaze to carrots and bake 2 minutes. Remove glazed carrots from oven.
  11. To make sumac-crusted filet mignon: Thaw filet mignons in refrigerator overnight, pat dry with paper towels then bring to room temperature 30 minutes.
  12. In small bowl, whisk kosher salt, sumac, black pepper and dried thyme. Season steaks on all sides.
  13. In cast-iron pan over high heat, add grapeseed oil.
  14. Place filets in pan and cook 4 minutes until browned and seared. Add 1 tablespoon butter to pan. 
  15. Flip filets and butter baste about 20 seconds. Cook filets 3 minutes for medium-rare.
  16. Remove filets from pan and top each with 1/2 tablespoon butter. Rest steaks 7-8 minutes.
  17. Place garlic mashed potatoes on plate and top with sumac-crusted filet mignon. Place honey-lemon glazed carrots next to filet mignon and mashed potatoes.

California Grape Shallot and Thyme Roasted Chicken

Servings: 6

  • 1          whole chicken (about 4 pounds)
  • 1          tablespoon butter, at room temperature
  • 1          teaspoon sea salt
  • 3/4       teaspoon dried thyme
  • freshly ground pepper, to taste
  • 2          cups red and black Grapes from California
  • 1/3       cup finely chopped shallots
  • 1/3       cup dry white wine
  • fresh thyme leaves, for garnish (optional)
  1. Heat oven to 375 F.
  2. Rinse chicken and pat dry; place in 13-by-9-inch baking dish. Spread butter over surface of chicken and sprinkle with salt, thyme and pepper, to taste. Roast 45 minutes.
  3. Add grapes, shallots and wine to pan and roast 30-40 minutes, or until grapes are softening and thighs reach internal temperature of 165 F on meat thermometer.
  4. Remove from oven and tent with foil; let stand 15 minutes before carving. Place grapes, shallots and cooking juices in bowl and serve over slices of chicken. Garnish with fresh thyme leaves, if desired.

Nutritional information per serving: 260 calories; 29 g protein; 11 g carbohydrates; 9 g fat (31% calories from fat); 3 g saturated fat (3% calories from saturated fat); 90 mg cholesterol; 480 mg sodium; 1 g fiber.

California Grape Beef Bulgogi Lettuce Wraps

Servings: 6

Pickled Grapes:

  • 1/3       cup unseasoned rice vinegar
  • 2          tablespoons sugar
  • 1/2       teaspoon coriander seeds
  • 1/2       teaspoon mustard seeds
  • 1/4       teaspoon crushed red pepper flakes
  • 1 1/2    cups Grapes from California, halved
  • 2          tablespoons minced red onion

Beef Bulgogi:

  • 1/2       pound beef round or sirloin steak
  • 1/3       cup bulgogi sauce, plus additional for serving (optional)
  • 2          tablespoons unseasoned rice vinegar
  • 1          teaspoon sesame oil
  • 1/2       tablespoon vegetable oil
  • 12        larger hearts of romaine leaves, clean and dry
  • snipped green onion tops
  1. To make pickled grapes: In small saucepan, stir vinegar, sugar, coriander seeds, mustard seeds and pepper flakes; bring to simmer. Remove from heat and stir to dissolve sugar; let cool to warm.
  2. Stir in grapes and onion and set aside to cool. Let stand 1 hour, stirring occasionally.
  3. To make beef bulgogi: Cut beef into small, bite-size strips.
  4. In medium bowl, stir 1/3 cup bulgogi sauce, vinegar and sesame oil then add beef. Let marinate 1 hour, stirring occasionally.
  5. In large skillet over medium heat, heat vegetable oil. Using slotted spoon or tongs, remove beef from marinade and add to skillet. Stir fry until beef is cooked through and golden brown, stirring constantly; let cool.

To serve: Place equal amounts beef and pickled grapes in romaine leaves and sprinkle with green onions. Serve immediately with additional bulgogi sauce, if desired.

California Grape and Tamarind Whiskey Smash

Servings: 2

  • 3/4       cup halved green Grapes from California
  • ice
  • 6          tablespoons (3 ounces) whiskey
  • 1          tablespoon fresh lemon juice
  • 1          teaspoon tamarind paste
  • bitters, to taste
  1. In medium bowl, muddle grapes until mashed and in small pieces. Transfer to two lowball glasses and add ice almost to top of glasses.
  2. In shaker or small bowl, combine whiskey, lemon juice and tamarind paste; shake or stir. Season with a few drops of bitters, to taste. Pour into glasses over grapes and stir briskly to chill and dilute slightly.

Avocado and Blueberry Chia Pudding

  • 1 1/2 cups plain, unsweetened soy milk (or milk of choice) 
  • 1 ripe, fresh avocado, halved, pitted and peeled 
  • 3/4 cup frozen blueberries 
  • 1/2 cup unsweetened vanilla Greek yogurt 
  • 1 tablespoon maple syrup 
  • 1/3 cup chia seeds 

To Serve: 

  • 1/3 cup granola 
  • 1/3 cup fresh blueberries
  • 1 kiwi, chopped 
  • 1/2 fresh, ripe avocado, halved, pitted, peeled and chopped
  1. In blender, puree soy milk, avocado, blueberries, yogurt and maple syrup until smooth. Pour mixture into storage container or bowl and add chia seeds. Whisk well to combine. Cover with lid or plastic wrap and refrigerate 4 hours or overnight, until thickened.
  2. To serve, divide into bowls and top with granola, fresh blueberries, kiwi and avocado.  

Notes: Use any milk (dairy or non-dairy) that you prefer in pudding. Use fresh blueberries or conventional frozen blueberries. Other topping options include: nuts, seeds, hemp hearts, sliced banana or strawberries, or nut butter.

Peanut Butter and Jelly Oat Bars

Recipe adapted from Sally’s Baking Addiction
Prep time: 10 minutes
Bake time: 25 minutes
Servings: 16

  • 1          cup mashed bananas (about 3 medium or 2 large)
  • 1/2       cup creamy or crunchy peanut butter
  • 1/4       cup brown sugar
  • 1          egg
  • 1/2       cup milk (or non-dairy milk of choice)
  • 2 1/2    cups old-fashioned whole oats
  • 1          teaspoon baking powder
  • 1/2       teaspoon salt
  • 1          teaspoon ground cinnamon
  • 1          teaspoon pure vanilla extract
  •             raspberry or strawberry jam, to taste

Greek Yogurt Topping (optional):

  • 1/2       cup Greek yogurt
  • 1/2       teaspoon vanilla
  • 1/2       cup powdered sugar
  • freeze-dried raspberries or strawberries, to taste
  1. Preheat oven to 350 F. Line 9-inch square baking pan with parchment paper, leaving enough overhang on sides to easily remove bars from pan. Set aside.
  2. In large bowl or stand mixer, mash bananas. On medium speed, whisk in peanut butter, brown sugar, egg, milk, oats, baking powder, salt, cinnamon and vanilla. Batter should be thick but still pourable.
  3. Pour mixture into prepared pan and use spoon or knife to swirl jam into batter. Bake 25-28 minutes, or until center is set.
  4. Remove from oven and cool at room temperature 30-60 minutes then refrigerate pan until chilled, about 1 hour.
  5. Lift parchment paper to remove bars from pan then cut into 16 equal squares.
  6. To make optional yogurt topping: In bowl, whisk yogurt, vanilla and powdered sugar until smooth. Refrigerate at least 30 minutes before drizzling on bars. Add dried fruits, as desired.
  7. Store leftover bars in airtight container and refrigerate up to 10 days.

Notes: Egg can be replaced with 1/4 cup unsweetened applesauce. Bars are difficult to cut before chilling.
