Why restaurant self-service kiosks can actually result in customers ordering less food

When restaurant customers order from self-service kiosks while a line forms behind them, they feel rushed, prompting them to buy less and stick to familiar items instead of browsing for something new, according to a recent study we published.

We found that businesses can reduce this pressure and increase satisfaction by revamping their system so that a single line of waiting customers leads to multiple kiosks. That way, customers feel less rushed because they aren’t the only ones who may be holding up the line.

We are experts in food and beverage marketing who research self-service technology. In recent years, many restaurants have adopted automated technology to streamline the menu ordering process and address staffing shortages. This ultimately gives customers more control over ordering, but an unintended consequence of this has seemed to be that it also makes them feel more responsibility for keeping the line that forms behind them moving, leading to rushed orders.

To understand what’s going on, we conducted three experiments in which we asked hundreds of participants to imagine waiting in line at a restaurant in a variety of scenarios. We found that most people do in fact feel pressured to order quickly when there’s a queue behind them. This resulted in hasty decisions and lower overall spending.

But we also found that retailers can mitigate this in one of two ways: by creating a single line serving several kiosks or by showing a pop-up message on the kiosk interface stating that the business takes full responsibility for any service delays during menu orders.

Our research reveals the social dynamics at play in do-it-yourself ordering and we believe offers valuable implications for designing a more effective and customer-friendly self-service process. It also alerts restaurant owners to the potential unintended consequences of switching to automated technology.

A poached egg may look fancy, but it is surprisingly easy to prepare. With a tender egg white and warm, runny yolk, it makes a delicious addition to toast, salads, breakfast bowls or avocado toast.

Ingredients

  • 1 large fresh egg
  • Water
  • 1 teaspoon white vinegar, optional
  • Salt and black pepper
  • Toast or English muffin for serving, optional

Instructions

Fill a saucepan with about 2 to 3 inches of water and bring it to a gentle simmer. Avoid a rolling boil, which can break the egg apart.

Crack the egg into a small cup or bowl. Add the vinegar to the water if desired—it helps the egg white hold its shape.

Gently slide the egg into the simmering water. Cook for about 3 minutes for a runny yolk, or 4 to 5 minutes for a firmer center.

Remove the egg with a slotted spoon and place it briefly on a paper towel to absorb excess water. Season with salt and pepper, then serve immediately.

Fresh, cold eggs usually produce the neatest poached eggs because their whites are thicker and stay closer to the yolk while cooking.

Sorghum Fall Harvest Salad

  • 1          cup roasted butternut squash, cubed
  • 1/4       cup olive oil, plus additional for drizzling, divided
  •             salt, to taste
  •             pepper, to taste
  • 2          tablespoons apple cider vinegar
  • 1          tablespoon sorghum syrup
  • 1          teaspoon Dijon mustard
  • 4          cups kale, chopped
  • 1          cup cooked whole-grain sorghum
  • 1          small apple, diced
  • 1/2       cup pecan halves, toasted
  • 1/4       cup dried cranberries
  • 1/4       cup red onions, diced
  • 1/3       cup feta cheese, crumbled
  1. Preheat oven to 400 F. Toss cubed butternut squash with a drizzle of olive oil and salt and pepper, to taste.
  2. Spread on a baking sheet and roast for 20-25 minutes, flipping halfway, until tender and golden.
  3. In a jar or small bowl, whisk 1/4 cup olive oil, apple cider vinegar, sorghum syrup, Dijon mustard and salt and pepper, to taste, until emulsified.
  4. Add chopped kale to a large bowl. Massage with a drizzle of olive oil 1-2 minutes until tender.
  5. Arrange precooked sorghum, roasted squash, apple, pecans, dried cranberries, red onion and feta cheese on top of kale.
  6. Drizzle with sorghum syrup dressing just before serving. Toss lightly to combine or serve dressing on the side.

“Across North America, there are organizations showing up every day for their communities, often without recognition and with limited resources,” said Monica Bauer, SVP of social impact, PepsiCo and president of the PepsiCo Foundation. “The Community Impact Awards help shine a light on organizations that are creating opportunities, solving local challenges and making a real difference in people’s lives. What makes this program special is that the recognition comes from PepsiCo associates who know these organizations firsthand and have seen their impact up close.”

This year, 100 organizations across the U.S. and Canada received $500,000 total in grants and teamed up with their respective nominating employees for volunteer activities supporting their missions, giving employees another opportunity to engage directly.

Give What You Can

Financial contributions are a valuable way to give back, but they aren’t the only option. Many organizations need non-monetary donations such as school supplies, canned goods, clothing, toys and technology. Before collecting items, check with organizations to learn what is most needed and how contributions can make the greatest impact.

Use Your Voice

One person can make a difference. When that person gets a friend or family member involved, more people can discover and support organizations doing important work.
