Bloody Mary Dip

Prep time: 5 minutes
Servings: 8

  • 8 ounces cream cheese, softened
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 3 tablespoons pimento olives, chopped
  • 2 tablespoons onions, chopped
  • 2 tablespoons bacon, chopped
  • 1/4 cup chopped Dandy Celery, plus additional whole sticks for serving, divided
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon granulated garlic
  • olives, for garnish
  • tomatoes, for garnish
  • crackers, for serving
  1. In large bowl, combine cream cheese, tomato paste, Worcestershire sauce, pimento olives, onions, bacon, 1/4 cup chopped celery, salt, pepper and garlic.
  2. Mix well. Transfer to serving dish.
  3. Garnish with skewered olives and tomatoes. Serve with celery and crackers to dip.

Skinny 7-Layer Dip

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 2 cans (15 ounces each) garbanzo beans, drained and rinsed
  • 2 teaspoons hot sauce
  • 6-8 tablespoons water
  • 2 ripe avocados
  • 1 lime, juice only
  • 1 teaspoon salt
  • 1/3 cup Dandy Celery, minced
  • 1 cup fresh cilantro, finely chopped
  • 1/3 cup onion, minced
  • 1 1/2 cups nonfat plain Greek yogurt, plus additional for garnish, divided
  • 2 medium tomatoes, diced
  • 2 packages Dandy Radish MiniSticks
  • 2 cups low-fat cheddar cheese
  • 1 cup sliced black olives
  • 10 cilantro leaves
  1. In skillet over medium-high heat, heat oil and garlic until softened and lightly browned.
  2. Add garbanzo beans and hot sauce. Cook 3 minutes, stirring frequently.
  3. Scrape contents of pan into food processor, add 6 tablespoons water and process until smooth. Add 1-2 tablespoons water as necessary to get puree to spreadable consistency.
  4. Transfer bean mixture to bowl to cool before assembling dip.
  5. Cut avocados in half and remove pits. Scoop out flesh and cut into 1-inch chunks.
  6. In food processor, process avocado chunks, lime juice and salt until mostly smooth. Set aside until ready to assemble.
  7. In small bowl, mix celery, cilantro, onion and 1 1/2 cups Greek yogurt.
  8. To assemble: Using spoon or plastic bag with tip removed for piping, distribute garbanzo bean mixture evenly among 10 small containers.
  9. Add layer of avocado puree in same manner.
  10. Sprinkle layer of diced tomatoes over avocado puree in each container. Add layer of radish sticks.
  11. Distribute Greek yogurt mixture evenly over cups.
  12. Divide cheese over cups then layer black olives. Garnish with dollop of Greek yogurt and cilantro leaf.

Kiwi and Whipped Feta Toast

  • 3/4       cup crumbled feta cheese
  • 1/4       cup plain Greek yogurt
  • 8          small rustic bread slices, 3/4-inch thick, toasted
  • 2          Zespri SunGold Kiwifruit, peeled and thinly sliced
  • 1          firm but ripe avocado, peeled, pitted and sliced
  • extra-virgin olive oil
  • fresh basil
  1. In small food processor, process crumbled feta cheese and Greek yogurt until smooth.
  2. Spread equal amounts onto bread slices and top with alternating slices of kiwi and avocado.
  3. Drizzle lightly with olive oil and sprinkle with basil before serving.

Optional: Add 1 tablespoon tahini sauce to feta for richer flavor.

Orange Juice Citrus Chicken Kebabs

Servings: 8 (2 kebabs per serving)

  • 1 large Florida Orange, zest only
  • 1 lime, zest only
  • 1/2 teaspoon ground thyme
  • 2 tablespoons vegetable oil
  • 1/4 teaspoon granulated garlic
  • 1 teaspoon salt
  • white pepper, to taste
  • 1 cup Florida Orange Juice
  • 1 cup lemon-lime soda
  • 2 pounds chicken tenders
  • 8 wooden skewers
  1. To make marinade: In medium mixing bowl, combine orange zest; lime zest; thyme; oil; garlic; salt; white pepper, to taste; orange juice; and soda.
  2. Add chicken and completely coat with marinade. Cover bowl and place in refrigerator at least 1 hour.
  3. Soak wooden skewers in water 20-30 minutes.
  4. To make kebabs: Remove chicken from fridge and lace through each skewer using weaving motion. Repeat for all chicken tenders and set aside.
  5. When skewers are prepared, drizzle extra marinade over chicken.
  6. Heat grill to medium. Place chicken on grill. Cover and cook 3 minutes per side, or until center of meat reaches internal temperature of 170 F.
  7. Remove from grill and serve immediately, or cover with foil and serve later.

Tips: Cover kebabs with foil for at least 20 minutes after cooking to trap in flavor and juices.

Add vegetables to kebabs, if desired, to increase flavor

  • 8 ounces water
  • 1 pinch salt
  1. Mix orange juice and water.
  2. Add pinch of salt.
