Lime-Rubbed Chicken Avocado Tacos with Corn Guacamole

Servings: 8
Chicken:
- 1 tablespoon fresh-squeezed lime juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper, or to taste
- 1 tablespoon chopped fresh rosemary, or 1/4 teaspoon dried
- 1 pound boneless, skinless chicken breasts
- corn or safflower oil
Corn Guacamole:
- 1 jalapeno chile, roasted and chopped, or to taste
- 2 garlic cloves, skin on
- 2 large ripe Avocados From Mexico, halved, pitted and diced
- 3/4 cup corn kernels shaved from corn, or cooked from thawed
- 3/4 cup cherry or grape tomatoes, halved or chopped
- 1 tablespoon fresh-squeezed lime juice
- 3/4 teaspoon kosher or sea salt, or to taste
Tacos:
- 16 corn tortillas
- To make chicken: In bowl, mix lime juice with olive oil, salt, ground pepper and rosemary. Pour on top of chicken in container. Cover and refrigerate 30 minutes or up to 12 hours.
- Heat medium-sized saute or grill pan over medium-high heat. Add corn or safflower oil; once hot but not smoking, add chicken. Saute until golden brown and cooked through, about 5 minutes per side. Remove from pan; place on chopping board to cool. When cool enough to handle, slice into diagonal strips about 1/2-inch wide.
- To make corn guacamole: Place jalapeno and garlic cloves in small baking dish under broiler 6-9 minutes, or until completely cooked through, soft and skin is charred. Once cool enough to handle, peel garlic and mince along with chiles.
- Place diced avocado in mixing bowl. Add charred and minced garlic and jalapenos, gently tossing together. Incorporate corn and tomatoes. Squeeze lime juice on top and sprinkle with salt. Mix together.
- To assemble tacos: In hot skillet or comal set over medium-low heat, heat tortillas about 1 minute per side.
- Place tortillas in tortilla warmer or wrap in clean kitchen towel or cloth napkin. Serve with guacamole and chicken.

Using ripe, succulent peaches will make this ice cream burst with natural sweetness, while the vanilla and brown sugar add extra richness and a hint of caramelized flavor. A little brightness and zing from the fresh lemon juice finishes off your bowl of refreshing summer goodness.
The recipe requires an ice cream maker, and you’ll need to freeze the bowl for 24 hours before you churn, so be sure to plan ahead. Once finished churning, you can serve it immediately or pop it in the freezer to enjoy during the next heat wave.

Peach Ice Cream
Recipe adapted from Stephie Cooks
Prep time: 25 minutes
Churning and freezing time: 5 hours, 30 minutes
Servings: 12 (makes 1 1/2 quarts)
- 4 cups fresh peaches, peeled and sliced (5-6 peaches)
- 1/2 cup granulated sugar
- 1 cup brown sugar
- 3 tablespoons fresh lemon juice
- 2 1/4 teaspoons vanilla extract
- 2 cups heavy cream
- Prior to churning: Freeze bowl of ice cream maker 24 hours.
- In large bowl, combine peaches, sugars, lemon juice and vanilla. Let sit 15 minutes, stirring occasionally, until sugars have dissolved and peaches are juicy.
- Place peach mixture in blender or food processor; pulse until peaches are broken down but not totally pureed. Add heavy cream; stir to combine.
- Pour mixture into airtight container and refrigerate 1-2 hours, or overnight.
- Use ice cream maker to churn mixture according to manufacturer’s instructions. Once churned, serve immediately for softer consistency or place in airtight, freezer-safe container and freeze 2-4 hours to harden before serving.

The fish is rich in omega-3 fatty acids and the avocado offers a boost of healthy unsaturated fat, while the grapes add protective dietary flavonols, which may help promote anti-inflammatory and beneficial antioxidant activity.
A study published in the scientific journal “Neurology” found a higher intake of certain flavonols – including three naturally found in grapes – is associated with a 48% decreased risk of developing Alzheimer dementia.

California Grape and Sardine Avocado Toast
Prep time: 10 minutes
Servings: 4
- 1 large firm, ripe avocado, halved and pitted
- 4 small slices rustic whole grain bread (1/2-inch thick), toasted or grilled
- 1 individual container sardines in olive oil or water, drained
- 1/2 cup quartered red and black Grapes from California
- Aleppo pepper flakes
- fresh cilantro, snipped
- 1 lemon half
- salt (optional)
- With spoon, scoop avocado out of skin and use fork to coarsely mash.
- Spread onto bread slices and top with whole or torn sardines. Sprinkle grapes over sardines.
- Top with generous sprinkle of Aleppo pepper, cilantro, squeeze of fresh lemon and salt, if desired.
Nutritional information per serving: 290 calories; 11 g protein; 29 g carbohydrates; 16 g fat (50% calories from fat); 2.5 g saturated fat (8% calories from saturated fat); 20 mg cholesterol; 210 mg sodium; 6g fiber.
