Ingredients:

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil

  • 1 green bell pepper, diced
  • 2 celery stalks, chopped

Instructions:

  1. Prepare the chicken: Start by seasoning the chicken breasts with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the chicken breasts on both sides until they’re cooked through and no longer pink in the center. Remove the chicken from the pot and set it aside to cool. Once cool, shred the chicken into bite-sized pieces using two forks.
  2. Saute the aromatics: Using the same pot, add the diced onion, green bell pepper, celery, and minced garlic. Saute for about 5 minutes over medium heat until the vegetables are tender and lightly golden.
  3. Add tomatoes and broth: Pour in the diced tomatoes (with their juice) and chicken broth. Stir well, scraping the bottom of the pot to release any flavorful bits. Bring the mixture to a boil, then reduce the heat to a simmer.
  4. Season and simmer: Add the Cajun seasoning, dried thyme, dried oregano, bay leaf, salt, and black pepper to the pot. Stir well to combine all the flavors. Simmer uncovered for 15-20 minutes, allowing the flavors to meld and the gumbo to thicken slightly.
  5. Incorporate the chicken and vegetables: At this point, add the shredded chicken and frozen okra (if using) to the pot. Stir gently to combine everything. Continue simmering for another 10-15 minutes until the okra is cooked through and the gumbo reaches your desired consistency.
  6. Cook the rice: While the gumbo simmers, cook the rice according to the package instructions until fluffy and tender.

Chai Oatmeal Energy Bites

Prep time: 10 minutes Cook time: 55 minutes Yield: 2 doze
  • 1          cup DairyPure Milk50 Vanilla
  • 3          chai tea bags, divided
  • nonstick cooking spray
  • 2          cups old-fashioned oats
  • 1/2       teaspoon salt
  • 2          teaspoons baking powder
  • 2          tablespoons flaxseed
  • 1          teaspoon vanilla
  • 1/3       cup maple syrup
  • 1/2       cup chopped pecans
  1. In small pot, heat milk until hot but not simmering. Take off heat and place two chai tea bags in milk. Steep tea in milk until cool, about 30 minutes, then discard tea bags.
  2. Preheat oven to 350 F. Spray mini muffin pan with nonstick cooking spray. In large bowl, stir cooled chai milk, oats, salt, baking powder, flaxseed, vanilla and maple syrup.
  3. Open third chai tea bag and measure 2 teaspoons tea. If tea is coarse, blitz in spice grinder or use mortar and pestle to grind more finely. Stir tea into batter and let mixture sit 10 minutes so oats can soak up milk.
  4. Give batter another stir then fill each mini muffin cavity about 3/4 with batter, about 1 tablespoon in each. Sprinkle chopped pecans on top. Bake bites 12-13 minutes, or until toothpick inserted in center of bite comes out clean. Let cool 5 minutes.

Vanilla Coffee Protein Shake

Prep time: 5 minutes Cook time: 8 hours Servings: 1
  • 5-6       ounces DairyPure Milk50 Vanilla
  • 1/2       banana, sliced and frozen
  • 1/4       cup, plus 2 tablespoons, cold brew concentrate
  • 1/2       teaspoon vanilla extract
  • 1-2       scoops protein powder of choice
  • 2          teaspoons simple syrup (or to taste)
  1. Make ice cubes by pouring milk into ice cube tray and freezing until solid, about 8 hours.
  2. To make shake: In high-speed blender, blend frozen banana slices, cold brew, vanilla, protein powder, simple syrup and 5-6 milk cubes until creamy. Serve in glass.

  • 2 medium heads broccoli
  • 2 apples
  • lemon juice
  • 1 carrot
  • 1 cup blueberries
  • 1 cup dried cranberries
  • 1 cup sunflower seeds
  • 1 cup pecans
  • 1 package (2 1/2 ounces) real bacon pieces
  Dressing:
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 1/3 cup apple cider vinegar
  • 2/3 cup sugar
  • 2 tablespoons poppy seeds
 
  1. Coarsely chop broccoli and place in large bowl.
  2. Coarsely chop apples and brush with lemon juice to prevent browning; add to bowl.
  3. Shred carrot and add to bowl with blueberries, cranberries, sunflower seeds, pecans and bacon.
  4. To make dressing: Mix mayonnaise, milk, apple cider vinegar, sugar and poppy seeds. Pour over broccoli salad and mix well.
