Savory Street Tacos

Servings: 4-6

  • 1          chuck roast (2-3 pounds)
  • 1          package taco seasoning
  • 1          can (10 ounces) beef consomme
  • 16-20   street taco tortillas
  • 1          package (8 ounces) shredded cheese
  • 1/4       cup avocado oil
  • salsa, for serving
  • guacamole, for serving
  • queso, for serving
  1. Cover chuck roast with taco seasoning then place in slow cooker. Pour beef consommé over roast and cook on low 6 hours to braise.
  2. Heat oven to 425 F.
  3. Use fork to shred roast.
  4. Brush outside of tortillas with avocado oil and fill with meat and shredded cheese. Place in casserole dish and bake 10-15 minutes until tacos reach desired crispiness.
  5. Place on tray and serve with salsa, guacamole and queso.

Tip: Recipe can be doubled for large crowds.

Cheesy Baked Potato Casserole

  • 5          pounds red potatoes, cubed
  • 1          pound bacon, cooked and crumbled
  • 1          pound cheddar cheese, cubed
  • 16        ounces shredded cheddar cheese
  • 1          yellow onion, chopped
  • 1          cup mayonnaise
  • 8          ounces sour cream
  • 1          tablespoon minced chives
  • 1          teaspoon salt
  • 1/2       teaspoon pepper
  1. Heat oven to 325° F.
  2. In large bowl, combine potatoes and bacon.
  3. In separate large bowl, combine cheese, onion, mayonnaise, sour cream, chives, salt and pepper. Add to potato and bacon mixture until combined.
  4. Pour into 9-by-13-inch baking dish. Bake 50-60 minutes until browned and bubbly.

  • 2          cups Teremana Reposado
  • 1 1/4    cups pomegranate juice
  • 1          cup fresh lime juice
  • 2/3       cup cinnamon syrup
  • 3          pinches salt
  • ice
  • cinnamon sticks
  • rosemary sprigs
  1. In pitcher, combine reposado, pomegranate juice, lime juice, cinnamon syrup and salt. Stir to incorporate.
  2. Pour into rocks glasses over fresh ice.
  3. Garnish with cinnamon sticks and rosemary sprigs.

Cranberry Paloma

Servings: 8-10
  • 1 1/2    cups Teremana Blanco
  • 1          cup cranberry juice
  • 1/2       cup fresh lime juice
  • ice
  • grapefruit soda
  • lime wheels
  • cranberries
  1. In pitcher, combine blanco tequila, cranberry juice and lime juice.
  2. Pour into salt-rimmed Collins glasses over fresh ice. Top with grapefruit soda. Stir gently to combine.
  3. Garnish with lime wheels and cranberries.

Mocha Espresso Martini

Servings: 1
  • 1 1/2    ounces Teremana Anejo
  • 1          ounce cold brew concentrate
  • 1/2       ounce coffee liqueur
  • 1/4       ounce chocolate syrup
  • ice
  • 3          coffee beans or shaved dark chocolate, for garnish
  1. In cocktail shaker, combine tequila, cold brew concentrate, coffee liqueur, chocolate syrup and ice. Shake until chilled.
  2. Double strain into martini glass.
  3. Garnish with coffee beans or shaved dark chocolate.
