Meatball Tortellini Soup

Servings: 6-8

  • 4 cups beef broth
  • 1 can (14 ounces) diced tomatoes
  • 16 ounces frozen meatballs
  • 19 ounces tortellini
  • 6 ounces frozen spinach
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon Italian seasoning
  • 3/4 cup Parmesan cheese, plus additional for serving, divided
  • salt, to taste
  • pepper, to taste
  • 1/4 cup heavy cream
  • bread, for serving
  1. In Dutch oven, pour in beef broth and diced tomatoes. Fill empty diced tomatoes can with water and add to pot. Stir in meatballs, tortellini and spinach. Cook over medium heat then add onion powder, garlic powder, Italian seasoning and 3/4 cup Parmesan cheese. Add salt and pepper, to taste.
  2. Cook 25 minutes, stirring occasionally. Add heavy cream and cook 5 minutes.
  3. Serve with bread and additional Parmesan cheese.

  1. Preheat the grill for 15 minutes to loosen any stuck-on residue then turn it off and let it cool slightly.
  2. Ensure the gas supply is turned off before cleaning.
  3. Remove the grates and scrub them thoroughly with a grill brush and warm, soapy water. Rinse and let dry.
  4. Clean burners by wiping them with a damp cloth.
  5. Scrape the inside of the grill to remove any debris and use a vacuum to collect loose dirt and ash.
  6. Wipe down the exterior of the grill with a microfiber cloth and grill cleaner.
  7. Reassemble the grill once all parts are dry and give it a final wipe down.

Tuna Stuffed Avocado

Total time: 5 minutes
Servings: 2

  • 1 packet (2 1/2 ounces) Chicken of the Sea Wild Caught Light Tuna with Old Bay Seasoning
  • 1/4 cup whole kernel cooked corn
  • 1 tablespoon minced parsley
  • 1 avocado
  • lemon wedges, for serving
  1. In bowl, combine tuna, corn and minced parsley.
  2. Halve avocado and carefully remove seed.

Skillet Lasagna

  • 1 pound ground beef
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • salt, to taste
  • pepper, to taste
  • 44 ounces marinara sauce
  • 1/2 cup heavy whipping cream
  • 1/2 cup ricotta
  • 1 1/2 cups frozen spinach
  • 9 lasagna noodles
  • 1 cup mozzarella cheese
  • bread, for serving
  • Parmesan cheese, for topping (optional)
  1. In large skillet or Dutch oven, brown ground beef with onion power, garlic powder and salt and pepper, to taste. Drain excess grease. Mix in marinara sauce, heavy whipping cream, ricotta and spinach.
  2. Break up lasagna noodles and add to skillet. Cover and let set over medium heat 10 minutes. Stir and top with mozzarella cheese. Cover and let set 10 minutes.
  3. Serve with bread and top with Parmesan cheese, if desired.
