Hot Honey Bacon Cheddar Dip with Pretzel Bites

Prep time: 15 minutes
Cook time: 1 hour
Servings: 12

  • 5          slices bacon
  • 1/2       cup honey
  • 2          tablespoons TRUFF Original Hot Sauce
  • 16        ounces cream cheese, softened
  • 2/3       cup lager-style beer
  • 1/4       cup Dijon mustard
  • 24        ounces cheddar cheese, grated
  • 1/2       cup fresh scallions, chopped
  • 1          teaspoon garlic powder
  • 1          teaspoon onion powder
  • 1/2       teaspoon cracked black pepper
  • 24        ounces frozen pretzel bites, baked according to package instructions
  1. Preheat oven to 400° F.
  2. Evenly space bacon in 13-by-9-inch dishwasher-safe ceramic or glass baking dish.
  3. Bake bacon 10 minutes.
  4. Microwave honey 15-20 seconds. Add hot sauce and whisk to combine.
  5. Remove bacon from oven and carefully pat dry with paper towels.
  6. Brush bacon with hot honey and return to oven. Set aside any remaining hot honey for later use.
  7. Bake bacon 10-15 minutes until brown and crisp. Set bacon aside to cool.
  8. Chop bacon into small, bite-sized pieces.
  9. Pour bacon pan drippings into bowl and discard once cool.
  10. In bowl, whisk softened cream cheese, beer and mustard to combine.
  11. Add grated cheddar cheese, chopped scallions, garlic powder, onion powder and black pepper. Stir until thoroughly combined.
  12. Spread mixture evenly in 13-by-9-inch dishwasher-safe ceramic or glass baking dish.
  13. Bake 20-25 minutes, or until hot and bubbly.
  14. Remove from oven and rest 5 minutes.
  15. Sprinkle top of dip with chopped bacon and drizzle with remaining hot honey.
  16. Serve dip alongside baked pretzel bites.

Champagne Chicken

Servings: 2-4

Mushroom Sauce:

  • 1 can (14 ounces) mushrooms
  • 1 1/2 cups chicken broth
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 tablespoon garlic powder
  • salt, to taste
  • pepper, to taste
  • 1/2 cup heavy cream

Chicken:

  • 2 chicken breasts
  • 2/3 cup flour
  • 2 tablespoons lemon pepper seasoning
  • 1/2 stick butter
  • 1/2 cup chicken broth
  • 3/4 cup champagne or sparkling wine
  • mushroom sauce
  • rice, for serving
  1. To make mushroom sauce: In blender, blend mushrooms and chicken broth; set aside.
  2. In skillet over medium heat, melt butter and mix in flour. Slowly add mushroom broth while stirring. It should start to thicken; if it doesn’t, add 1 tablespoon flour and stir well.
  3. Add garlic powder and salt and pepper, to taste. Mix in heavy cream while continuing to stir. Remove from heat and set aside. Reserve until ready to cook and keep refrigerated, if necessary.
  4. To prepare chicken: Butterfly chicken breasts, making four thinner pieces.
  5. In shallow dish, mix flour and lemon pepper seasoning. Coat chicken in flour mixture.
  6. Melt butter over medium heat and add chicken broth. Pan fry coated chicken breasts then remove from pan and set aside.
  7. Use champagne to deglaze frying pan and add mushroom sauce to heated champagne. Place chicken breasts back in pan in mushroom sauce and cook over medium heat about 5 minutes. Serve over rice.

Substitutions: Mushroom soup can be used in place of homemade mushroom sauce. Chicken broth can be used in place of champagne.

Cheesecake Cookie Cups

Yield: 12 cups

  • 2 packages (16 ounces each) chocolate chip cookie dough

Whipping Cream:

  • 1 cup heavy cream
  • 2 tablespoons sugar

Filling:

  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 cup whipping cream
  • crumbled cookies, for topping (optional)
  • sprinkles, for topping (optional)
  1. Heat oven to 350 F.
  2. In muffin tin, press three pieces of cookie dough into each muffin hole. Bake 15 minutes. Let cool 5 minutes then use shot glass and press into each hole. Let cool another 5 minutes and place on rack to cool completely.
  3. With hand mixer, mix heavy cream and sugar until it thickens then add cream cheese and powdered sugar; cream together. Spoon into cool cookie cups.
  4. If desired, use piping bag and pipe pretty edge around cup. Top with crumbled cookies or sprinkles, if desired.

  • 2          eggs
  • 1          stick melted butter
  • 1 1/2    cups dried cranberries
  • 1 1/2    cups chopped walnuts
  • 2          cups chopped white chocolate chips, divided
  1. Heat oven to 350 F.
  2. Mix cake mix, eggs, butter, cranberries, walnuts and 1 cup white chocolate chips. Spread into 7-by-11-inch baking dish and bake 35-40 minutes until toothpick inserted in center comes out clean.
  3. Let cool then melt remaining white chocolate chips and drizzle over bars.
