Beat the Winter Blues with a Childhood Classic

Simple Skillet Mac and Cheese

Recipe adapted from Mel’s Kitchen Cafe

Total time: 30 minutes

Servings: 6

  • 3 1/2    cups water, plus extra if needed
  • 1          can (12 ounces) evaporated milk, divided
  • 12        ounces pasta shells
  • salt, to taste
  • 1          teaspoon cornstarch
  • 1/2       teaspoon dry mustard
  • 1 1/2    cups shredded cheddar cheese
  • 1 1/2    cups shredded Monterey Jack cheese
  • 2          tablespoons butter, cut into small chunks
  • ground black pepper, to taste
  1. In nonstick skillet over high heat, bring water, 1 cup evaporated milk and shells to simmer. Season with salt, to taste. Cook, stirring, until pasta is tender and liquid thickens, 9-12 minutes.
  2. In small bowl, whisk remaining evaporated milk, cornstarch and dry mustard. Stir into skillet. Continue simmering until slightly thickened, about 1 minute.
  3. Remove skillet from heat. Stir in cheddar and Monterey Jack cheeses in batches, adding water to adjust consistency. Stir in butter then season with salt and pepper, to taste.

Cinnamon-Pecan Streusel Coffee Cake

Recipe adapted from Wilton.

Nonstick cooking spray

Topping:

  • 3/4         cup old fashioned rolled oats
  • 1/3         cup flour
  • 1/3         cup light brown sugar, firmly packed
  • 1/4         cup pecans, chopped
  • 1/2         teaspoon ground cinnamon
  • 1/4         teaspoon salt
  • 5             tablespoons butter, softened

Cake:

  • 1-1/2     cups flour
  • 3/4         teaspoon baking powder
  • 1/2         teaspoon salt
  • 1/4         teaspoon baking soda
  • 8             ounces cream cheese
  • 3             tablespoons butter, softened
  • 1/2         cup sugar
  • 1             whole egg
  • 1             egg yolk
  • 5             tablespoons milk
  • 2             teaspoons vanilla extract
  1. Heat oven to 350°F.
  2. Spray 9-inch round baking pan with nonstick cooking spray.
  3. To make topping: In medium bowl, combine oats, flour, brown sugar, pecans, cinnamon and salt.
  4. Using pastry blender, cut butter into mixture until blended.
  5. To make cake: In small bowl, combine flour, baking powder, salt and baking soda.
  6. In large bowl, mix cream cheese, butter and sugar. Beat mixture until smooth.
  7. Add egg, egg yolk, milk and vanilla extract. Beat mixture until smooth.
  8. Combine flour mixture with cream cheese mixture. Spread mixture in pan. Sprinkle topping over batter.
  9. Bake 35-40 minutes. Serve warm with ice cream or dust with powdered sugar.

Lemon Chicken Orzo Soup

Recipe courtesy of “Cookin’ Savvy” Servings: 4-6
  • 2 carrots
  • 2 celery stalks
  • 3 tablespoons butter
  • 2 cups cooked, chopped chicken
  • 1/3 cup lemon juice
  • 2 teaspoons lemon pepper
  • 6 cups broth
  • 1 cup orzo
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon thyme
  • 1 tablespoon sugar
  • 1 cup heavy cream
  • salt, to taste
  • pepper, to taste
  • cucumber sandwiches, for serving
  1. Chop carrots and celery. In pot, saute with butter.
  2. In bowl, mix chicken with lemon juice and lemon pepper then set aside.
  3. After carrots and celery are tender, add broth and orzo to pot. Then add garlic powder, onion powder, thyme and sugar. Simmer 10 minutes then add chicken and cream; simmer about 5 minutes.
  4. Add salt and pepper, to taste. Serve with cucumber sandwiches.

St. Patrick’s Day Stew

Recipe adapted from Simply Recipes

Prep time: 30 minutes

Cook time: 1 hour, 40 minutes

Servings: 6

  • 1 1/4    pounds marbled chuck beef stew meat, cut into 1 1/2-inch chunks
  • 1          teaspoon salt, plus additional to taste, divided
  • 1/4       cup extra-virgin olive oil
  • 6          garlic cloves, minced
  • 4          cups beef stock
  • 2          cups water
  • 1          cup extra stout beer
  • 1          cup red wine
  • 2          tablespoons tomato paste
  • 1          tablespoon sugar
  • 1          tablespoon dried thyme
  • 1          tablespoon Worcestershire sauce
  • 2          bay leaves
  • 2          tablespoons butter
  • 1          large onion, chopped
  • 4          carrots, cut into 1/2-inch pieces
  • 3          pounds russet potatoes, peeled and cut into 1/2-inch pieces
  • freshly ground black pepper, to taste
  • 2          tablespoons chopped fresh parsley
  1. Sprinkle beef chunks with 1 teaspoon salt. In large pot over medium-high heat, heat olive oil.
  2. Pat beef dry with paper towels and add to pot, working in batches to avoid crowding pot. Cook until browned on one side then flip and brown.
  3. Add garlic cloves to pot with beef and saute 30 seconds, or until fragrant. Add beef stock, water, beer, wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir.
  4. Bring mixture to simmer then reduce heat to low. Cover and simmer 1 hour, stirring occasionally.
  5. In separate pot over medium heat, melt butter. Add onions and carrots; saute until golden, about 15 minutes.
  6. After beef mixture simmers 1 hour, add onions, carrots and potatoes. Season with salt and pepper, to taste. Simmer uncovered until beef and vegetables are tender, about 40 minutes. Discard bay leaves and spoon excess fat.
  7. Sprinkle with parsley and serve.
