Roasted Sweetpotato Mango Salsa

Servings: 12
- 1 1/2 cups (2 medium) sweetpotatoes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/2 tablespoon chili powder
- 2 tablespoons olive oil
- 1 cup mango
- 1/2 green bell pepper
- 1/2 red bell pepper
- 1/2 cup purple onion
- 1 jalapeno
- 1/4 cup cilantro
- 1 tablespoon fresh-squeezed orange juice
- 1 tablespoon fresh-squeezed lemon juice
- 1 tablespoon fresh-squeezed lime juice
- chips or crackers
- Heat oven to 400 F.
- Peel, rinse and cube sweetpotatoes 1/4 inch or smaller. Toss sweetpotatoes with salt, pepper, chili powder and olive oil.
- Spread on baking sheet and roast 20 minutes.
- Peel and cube mango. Seed and cube bell peppers. Dice onion. Seed and dice jalapeno. Finely chop cilantro.
- Once sweetpotatoes cool, mix with mango, peppers, onion and jalapeno. Cover with fresh-squeezed orange, lemon and lime juices.
- Chill and serve with chips or crackers.

Savory Street Tacos

Servings: 4-6
- 1 chuck roast (2-3 pounds)
- 1 package taco seasoning
- 1 can (10 ounces) beef consomme
- 16-20 street taco tortillas
- 1 package (8 ounces) shredded cheese
- 1/4 cup avocado oil
- salsa, for serving
- guacamole, for serving
- queso, for serving
- Cover chuck roast with taco seasoning then place in slow cooker. Pour beef consommé over roast and cook on low 6 hours to braise.
- Heat oven to 425 F.
- Use fork to shred roast.
- Brush outside of tortillas with avocado oil and fill with meat and shredded cheese. Place in casserole dish and bake 10-15 minutes until tacos reach desired crispiness.
- Place on tray and serve with salsa, guacamole and queso.
Tip: Recipe can be doubled for large crowds.

Irish Cream Bundt Cake

- 1 white or yellow cake mix
- 1 stick butter, melted
- 4 eggs
- 3/4 cup milk
- 1/4 cup Irish cream
Icing:
- 1 tablespoon Irish cream (optional)
- 1 tablespoon milk (2 tablespoons if not using Irish cream)
- 2 cups powdered sugar
- 2 tablespoons cocoa powder (optional)
- Heat oven to 350 F.
- In bowl, add cake mix, melted butter, eggs, milk and Irish cream. Using hand mixer, mix until thoroughly combined. Pour batter into greased bundt pan. Bake 40-45 minutes. Let cool on rack.
- To make icing: Mix Irish cream, if desired; milk; and powdered sugar. Drizzle icing over cooled cake.
- If using cocoa, drizzle only half of icing then add cocoa to remaining icing and finish drizzling. Cut and serve.
