Southwest Ranch Taco Salad
Total time: 25 minutes
- 1/2 head romaine lettuce
- 1 pint cherry tomatoes
- 2 small avocados
- 1 tablespoon extra-virgin olive oil
- 1 pound ground beef (80/20 ground chuck)
- 2 teaspoons Newman’s Own Mild Taco Seasoning
- 1/4 cup water
- 1 can (15 1/2 ounces) black beans
- 1 1/2 cups canned corn
- 1 cup shredded sharp cheddar cheese
- 2 tablespoons chopped fresh cilantro, plus additional for serving (optional), divided
- 1 cup Newman’s Own Southwest Ranch Dressing
- 6 ounces tortilla chips
- Coarsely chop lettuce, halve cherry tomatoes and pit, peel and slice avocados. Set aside.
- In large frying pan over medium-high heat, heat olive oil. Brown ground beef, stirring occasionally, 4-5 minutes. Add taco seasoning and water; cook according to package directions, 5-8 minutes, or until meat is thoroughly cooked.
- Drain and rinse black beans. Set aside.
- Divide lettuce among serving bowls or plates. Top with ground beef, tomatoes, avocados, black beans, corn, cheese and 2 tablespoons cilantro. Tuck in tortilla chips.
- Drizzle with southwest ranch dressing and sprinkle with additional cilantro, if desired.

Easy Enchilada Casserole

Servings: 6 (12 as appetizer)
- 1 pound ground beef
- 1 tablespoon minced onion
- 1 tablespoon garlic powder
- 1 cup rice
- 1 can (14 1/2 ounces) diced tomatoes
- 1 can (10.7 ounces) enchilada sauce
- 1 can (15 ounces) rinsed black beans
- 1 can (15 ounces) whole corn
- 1 1/2 cups shredded cheddar cheese, divided
- 2 tablespoons mesquite seasoning
- cilantro, for topping (optional)
- green onions, for topping (optional)
- Heat oven to 350 F.
- In skillet, brown ground beef with minced onion and garlic powder. Drain and set aside.
- Cook rice according to package instructions.
- In casserole dish, mix meat, tomatoes, enchilada sauce, black beans, corn, rice, 1 cup cheddar cheese and mesquite seasoning. Bake, covered, 20 minutes.
- Top with remaining cheese, cilantro and green onions.

Cheesecake Cookie Cups

Yield: 12 cups
- 2 packages (16 ounces each) chocolate chip cookie dough
Whipping Cream:
- 1 cup heavy cream
- 2 tablespoons sugar
Filling:
- 8 ounces cream cheese, softened
- 1/2 cup powdered sugar
- 1 cup whipping cream
- crumbled cookies, for topping (optional)
- sprinkles, for topping (optional)
- Heat oven to 350 F.
- In muffin tin, press three pieces of cookie dough into each muffin hole. Bake 15 minutes. Let cool 5 minutes then use shot glass and press into each hole. Let cool another 5 minutes and place on rack to cool completely.
- With hand mixer, mix heavy cream and sugar until it thickens then add cream cheese and powdered sugar; cream together. Spoon into cool cookie cups.
- If desired, use piping bag and pipe pretty edge around cup. Top with crumbled cookies or sprinkles, if desired.
