What you’ll need:

  • Flour
  • Baking Powder
  • Sugar
  • Italian Seasoning (we used Oregano)
  • Minced Onion
  • Salt
  • Garlic Powder
  • Cottage Cheese
  • Butter
  • Milk
  • Baking Sheet

In a large bowl add in:

Baking powder,

Sugar,

Italian Seasoning (we used Oregano),

Salt and garlic powder,

Minced onion and whisk all the dry ingredients together.

Next, add in cottage cheese,

Melted butter and mix until crumbly.

Add in milk, mix until well combined.

On a prepared baking sheet, place dollops of batter onto the baking sheet. Bake in a pre-heated oven at 450°F for 12-15 minutes.

Slap on some of your favorite biscuit topping and enjoy!

Herb Biscuits

  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp sugar
  • 1/2 tsp dried Italian seasoning
  • 1/2 tsp dried minced onion
  • 1/4 tsp salt
  • 1/8 tsp garlic powder
  • 3/4 cup cottage cheese
  • 3 tbs butter
  • 1/3 cup milk
  1. Preheat oven to 450°F. Line baking sheet with parchment paper or nonstick foil.
  2. In large bowl stir together flour, baking powder, sugar, Italian seasoning, onion, salt and garlic powder. Add in cottage cheese and butter and mix until crumbly. Add milk. Stir until combined.
  3. Drop large dollops of batter onto prepared baking sheet. Bake about 12 to 15 minutes or until golden brown. Serve warm with some butter or your favorite biscuit topping.

Gingerbread Cupcakes with Honey Cream Cheese Frosting

Yield: 12 cupcakes
  • 1 3/4    cups all-purpose flour
  • 1/2       cup packed dark brown sugar
  • 1 1/2    teaspoons baking powder
  • 2          teaspoons ground ginger
  • 1          teaspoon ground cinnamon
  • 1/8       teaspoon ground cloves
  • 1/2       teaspoon salt
  • 1/2       cup (1 stick) unsalted butter, softened
  • 1/2       cup Busy Bee Raw Honey
  • 1          egg, lightly beaten
  • 1/2       cup buttermilk, at room temperature
  • 1          teaspoon vanilla extract
Honey Cream Cheese Frosting:
  • 8          ounces cream cheese, softened
  • 1/2       cup (1 stick) unsalted butter, softened
  • 1/4       cup Busy Bee Raw Honey
  • 1          teaspoon vanilla extract
  • 4-6       cups powdered sugar
  1. Preheat oven to 350 F.
  2. Line 12 regular-size muffin cups with paper baking cups.
  3. In medium bowl, whisk flour, brown sugar, baking powder, ginger, cinnamon, cloves and salt.
  4. In large bowl, using hand or stand mixer, beat softened butter and honey until smooth and slightly fluffy, 1-2 minutes. Beat in egg then mix in buttermilk and vanilla until combined.
  5. Add dry ingredients to wet mixture and stir gently until no streaks of flour remain; don’t overmix.
  6. Divide batter evenly among muffin cups, filling each about two-thirds full.
  7. Bake 20-22 minutes, or until toothpick inserted in center of cupcake comes out clean.
  8. Let cupcakes cool in pan about 5 minutes then transfer to wire rack to cool completely.
  9. To make frosting: Beat cream cheese and butter until smooth and creamy. Add honey and vanilla then gradually beat in powdered sugar until fluffy, spreadable and reaching desired sweetness. Chill for firmer consistency before piping or spreading, if desired.

Ollie’s Bargain Outlet is launching its sixth annual hOLLIEday Caring campaign, partnering with Feeding America® to give shoppers an easy way to fight hunger right at the register. From December 7th through December 24th, customers can round up their purchases to support local food banks in communities where Ollie’s stores operate. It’s a small gesture that adds up fast—over the past five years, these round-ups have generated more than $4 million for families facing food insecurity.

Food insecurity isn’t just a holiday problem—it’s a year-round crisis that intensifies when the calendar turns to November and December. Rising costs for food, housing, and healthcare have pushed millions of Americans into impossible choices: pay the electric bill or buy groceries? Fill a prescription or feed the kids? The Feeding America network has responded to this growing need by rescuing more than 4 billion pounds of wholesome food over the past year. Cheesy Spinach Chicken Bake

Recipe courtesy of “Cookin’ Savvy” Servings: 4-6
  • 2          cups chopped rotisserie chicken
  • 10        ounces frozen spinach, thawed and drained
  • 15        ounces ricotta cheese
  • 2          cups mozzarella cheese
  • 1          cup Parmesan cheese
  • 1          tablespoon Italian seasoning
  • 1          tablespoon garlic powder
  • 1          tablespoon onion powder
  • 1          tablespoon lemon thyme
  1. Heat oven to 375 F.
  2. Cut rotisserie chicken and spinach into bite-sized pieces. In baking dish, mix chicken and spinach with ricotta cheese.
  3. Add mozzarella, Parmesan, Italian seasoning, garlic powder, onion powder and lemon thyme. Mix well then bake 30 minutes.
