Classic Apple Lattice Tart
Servings: 8-10
- 2-3 sheets puff pastry dough
- 5 Envy Apples
- 2 tablespoons sugar
- 1 teaspoon finely grated lemon zest
- 1 tablespoon cornstarch
- 1 egg
- 1 tablespoon milk
- 1 tablespoon cinnamon sugar
- ice cream, custard or cream, for serving (optional)
- Preheat oven to 365 F.
- Use two sheets semi-thawed pastry to line fluted tart pan approximately 10 inches, pressing and trimming neatly to fit; chill 15 minutes.
- Peel, core and thinly slice apples into large bowl; sprinkle with sugar, lemon zest and cornstarch then toss well to evenly coat.
- Arrange apple slices in pastry-lined tart pan, laying flat.
- Beat egg with milk. Brush egg wash around pastry rim.
- Cut 1/2-inch strips from remaining pastry sheet and make lattice pattern over apples, crimping edges once lattice is completed.
- Brush tart with egg wash and sprinkle with cinnamon sugar.
- Bake 35-40 minutes, or until pastry is golden. Allow to cool at least 15 minutes before slicing. Serve with ice cream, custard or cream, if desired.
Apple and Date Muffins
Servings: 12
- 2 Envy Apples
- 1 tablespoon maple syrup
- 1 cup flour
- 1 cup bran flakes
- 3/4 cup brown sugar
- 1/2 cup chopped dates
- 1/2 teaspoon pumpkin pie spice
- 2 teaspoons baking powder
- 1 cup butter, melted
- 1 egg, beaten
- 3/4 cup milk
- butter or powdered sugar, for serving (optional)
- Preheat oven to 375 F and line muffin pan with cupcake papers.
- Peel and core apples and dice finely; toss with maple syrup.
- In large bowl, combine flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder; mix well.
- In separate bowl, whisk melted butter, egg and milk.
- Add half maple-apple mixture to dry ingredients.
- Pour wet ingredients into dry and fold together until mixed. Spoon evenly into muffin tin cupcake papers. Add 1 teaspoon remaining maple-apple mixture to top of each muffin.
- Bake 20-25 minutes until muffin mix is set and apple topping is golden. Allow muffins to cool 5 minutes before removing from tin.
- Serve with butter or dust with powdered sugar, if desired.
Stilton Cheese Pizza
Yield: 1 pizza
- 1 tablespoon pizza sauce
- 1 tablespoon sweet chili sauce
- 1 storebought pizza crust
- 1/2 cup mozzarella cheese, divided
- 1/3 cup stilton cheese, divided
- 1 Envy Apple
- 4 slices prosciutto
- fresh arugula leaves, for garnish
- fresh basil, for garnish
- toasted walnuts (optional)
- Preheat oven to 450 F.
- Combine pizza sauce and sweet chili sauce. Spread sauce over pizza crust.
- Sprinkle with half of the mozzarella cheese and half of the stilton cheese.
- Cut apple in half then core and slice into thin wedges. Arrange apple over cheese then top with remaining cheese.
- Cook pizza 7-10 minutes until pale golden and starting to bubble. Add prosciutto and cook 2-3 minutes until golden and bubbling.
- Serve with fresh arugula and basil. Sprinkle with toasted walnuts, if desired.
Apple, Bacon and Brie Cheese Toasties
Servings: 2
- 1 tablespoon butter
- 4 slices sourdough bread
- 1 teaspoon honey mustard, plus additional for serving (optional)
- 4 slices cooked bacon
- 1 Envy Apple, peeled, cored and thinly sliced
- 1 3/4 ounces brie cheese, sliced
- side salad, for serving (optional)
- Butter one side of each bread slice.
- Lay out two slices bread, buttered sides down. Top with honey mustard then layer with two bacon slices, apple slices and brie cheese slices. Top with remaining slices bread, buttered sides up, to create two sandwiches.
- Heat grill pan or frying pan and cook sandwiches until golden brown on each side and cheese is beginning to bubble.
- Cut sandwiches in half and serve with side salad or extra honey mustard, if desired.

Christmas Cranberry Punch
- 1 package fresh cranberries
- 1 can pineapple chunks
- 3-4 rosemary twigs
- 6 cans lemon-lime soda, divided
- 64 ounces cranberry juice
- 20 ounces orange pineapple juice
- 1 orange
- The night before, place four cranberries, two pineapple chunks and a few rosemary sprigs in each hole of silicone muffin pan or ice tray. Cover with 1 can lemon-lime soda and freeze.
- Chill remaining soda, cranberry juice and orange pineapple juice overnight.
- In punch bowl, mix remaining soda, cranberry juice and orange pineapple juice. Slice orange into 5-6 slices. Add lemon-lime soda ice cubes, handful of cranberries and orange slices. Serve.

Asparagus with Cranberry Sauce

Servings: 6
- 1/2 pound bacon
- 1 tablespoon butter
- 1 tablespoon garlic powder
- salt, to taste
- pepper, to taste
- 1 bunch fresh asparagus
- 1 can (14 ounces) whole cranberry sauce
- 1 tablespoon brown sugar
- 2 tablespoons balsamic vinegar
- Using kitchen shears, cut bacon into pieces then fry in skillet. Drain and set aside.
- In same skillet, add butter and garlic powder. Add salt and pepper, to taste. Saute asparagus then add bacon back to pan.
- In saucepan over medium heat, heat cranberry sauce, brown sugar and balsamic vinegar.
- Place asparagus on platter and pour sauce on top.

(Family Features) If holiday gatherings have started to feel more overwhelming than celebratory, it’s time to go back to the basics with seasonal desserts that are easy yet elegant.

Or for a classic take on an old favorite, these Christmas Cinnamon Cookies can even let the kiddos get involved – just make the dough then have your little helpers use their favorite cookie cutters to make festive shapes before the oven does the rest of the work.

Hummingbird Cake

- 1 spice cake mix
- 1 cup sugar
- 1 cup banana cream Greek yogurt
- 3 eggs
- 1 cup crushed pineapple
- 1 cup crushed pecans
- 1 cup all-purpose flour
- 2 tablespoons melted butter
Frosting:
- 1 stick butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup heavy whipping cream
- 5 cups powdered sugar
- 1 package pecans (optional)
- Heat oven to 350 F.
- In mixing bowl, mix spice mix and sugar. Blend in yogurt, eggs and pineapple. In separate bowl, mix pecans, flour and butter then add to cake mixture.
- Grease two 8-inch cake pans with butter. Pour half the mixture into each pan then bake 45 minutes. Cool on rack before icing.
- To make frosting: In mixing bowl, mix butter, cream cheese and heavy whipping cream. Slowly blend in powdered sugar.
- Ice cake then decorate with pecans, if desired.
Coconut Cake

- 1 vanilla or white cake mix
- 1 cup all-purpose flour
- 1 cup sugar
- 1 cup coconut Greek yogurt
- 1 cup milk
- 2 tablespoons melted butter
- 3 eggs
Frosting:
- 1 stick butter, softened
- 1 package (8 ounces) cream cheese, softened
- 1/4 cup heavy whipping cream
- 5 cups powered sugar
- 2-4 cups shredded coconut
- Heat oven to 350 F.
- In mixing bowl, mix cake mix, flour and sugar. Blend in yogurt, milk, butter and eggs.
- Grease two 8-inch cake pans with butter. Pour half the mixture into each pan and bake 45 minutes. Cool on rack before icing.
- To make frosting: In mixing bowl, mix butter, cream cheese and heavy whipping cream. Slowly blend in powdered sugar.
- Ice cake then pat shredded coconut gently into icing.
Christmas Cinnamon Cookies

- 1 2/3 cups self-rising flour
- 2 1/2 teaspoons cinnamon
- 1/4 teaspoon ginger
- 1/8 teaspoon cloves
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 egg
- 2 tablespoons water (optional)
- 1 cup powered sugar (optional)
- In mixing bowl, combine flour, cinnamon, ginger, cloves, sugar, brown sugar and egg to make dough. If dough is too dry to form into ball, add water. Form into log and wrap in parchment paper. Refrigerate 1 hour.
- Heat oven to 350 F.
- Roll dough out and cut into shapes with cookie cutters. Place on cookie sheet covered in parchment paper and bake 8-10 minutes. Let cool on rack then dust with powdered sugar, if desired.
