- 1 cup long-grain rice
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the chicken: Start by seasoning the chicken breasts with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Brown the chicken breasts on both sides until they’re cooked through and no longer pink in the center. Remove the chicken from the pot and set it aside to cool. Once cool, shred the chicken into bite-sized pieces using two forks.
- Saute the aromatics: Using the same pot, add the diced onion, green bell pepper, celery, and minced garlic. Saute for about 5 minutes over medium heat until the vegetables are tender and lightly golden.
- Add tomatoes and broth: Pour in the diced tomatoes (with their juice) and chicken broth. Stir well, scraping the bottom of the pot to release any flavorful bits. Bring the mixture to a boil, then reduce the heat to a simmer.
- Season and simmer: Add the Cajun seasoning, dried thyme, dried oregano, bay leaf, salt, and black pepper to the pot. Stir well to combine all the flavors. Simmer uncovered for 15-20 minutes, allowing the flavors to meld and the gumbo to thicken slightly.
- Incorporate the chicken and vegetables: At this point, add the shredded chicken and frozen okra (if using) to the pot. Stir gently to combine everything. Continue simmering for another 10-15 minutes until the okra is cooked through and the gumbo reaches your desired consistency.
- Cook the rice: While the gumbo simmers, cook the rice according to the package instructions until fluffy and tender.

St. Patrick’s Day Stew
Recipe adapted from Simply Recipes
Prep time: 30 minutes
Cook time: 1 hour, 40 minutes
Servings: 6
- 1 1/4 pounds marbled chuck beef stew meat, cut into 1 1/2-inch chunks
- 1 teaspoon salt, plus additional to taste, divided
- 1/4 cup extra-virgin olive oil
- 6 garlic cloves, minced
- 4 cups beef stock
- 2 cups water
- 1 cup extra stout beer
- 1 cup red wine
- 2 tablespoons tomato paste
- 1 tablespoon sugar
- 1 tablespoon dried thyme
- 1 tablespoon Worcestershire sauce
- 2 bay leaves
- 2 tablespoons butter
- 1 large onion, chopped
- 4 carrots, cut into 1/2-inch pieces
- 3 pounds russet potatoes, peeled and cut into 1/2-inch pieces
- freshly ground black pepper, to taste
- 2 tablespoons chopped fresh parsley
- Sprinkle beef chunks with 1 teaspoon salt. In large pot over medium-high heat, heat olive oil.
- Pat beef dry with paper towels and add to pot, working in batches to avoid crowding pot. Cook until browned on one side then flip and brown.
- Add garlic cloves to pot with beef and saute 30 seconds, or until fragrant. Add beef stock, water, beer, wine, tomato paste, sugar, thyme, Worcestershire sauce and bay leaves. Stir.
- Bring mixture to simmer then reduce heat to low. Cover and simmer 1 hour, stirring occasionally.
- In separate pot over medium heat, melt butter. Add onions and carrots; saute until golden, about 15 minutes.
- After beef mixture simmers 1 hour, add onions, carrots and potatoes. Season with salt and pepper, to taste. Simmer uncovered until beef and vegetables are tender, about 40 minutes. Discard bay leaves and spoon excess fat.
- Sprinkle with parsley and serve.

Simple Skillet Mac and Cheese
Recipe adapted from Mel’s Kitchen Cafe
Total time: 30 minutes
Servings: 6
- 3 1/2 cups water, plus extra if needed
- 1 can (12 ounces) evaporated milk, divided
- 12 ounces pasta shells
- salt, to taste
- 1 teaspoon cornstarch
- 1/2 teaspoon dry mustard
- 1 1/2 cups shredded cheddar cheese
- 1 1/2 cups shredded Monterey Jack cheese
- 2 tablespoons butter, cut into small chunks
- ground black pepper, to taste
- In nonstick skillet over high heat, bring water, 1 cup evaporated milk and shells to simmer. Season with salt, to taste. Cook, stirring, until pasta is tender and liquid thickens, 9-12 minutes.
- In small bowl, whisk remaining evaporated milk, cornstarch and dry mustard. Stir into skillet. Continue simmering until slightly thickened, about 1 minute.
- Remove skillet from heat. Stir in cheddar and Monterey Jack cheeses in batches, adding water to adjust consistency. Stir in butter then season with salt and pepper, to taste.

Pumpkin Chili
Prep time: 10 minutes
Cook time: 23 minutes
Servings: 4
- 2 tablespoons olive oil
- 1 green bell pepper, chopped
- 1 yellow onion, chopped
- 1 pound ground turkey
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 2 teaspoons cumin
- 1/2 teaspoon garlic powder
- 1 cup chicken broth
- 1 can (15 ounces) diced tomatoes
- 1 can (15 ounces) Green Giant 100% Pure Pumpkin
- 1 can (15 ounces) red kidney beans, drained and rinsed
- In Dutch oven over medium heat, heat oil. Add bell pepper and onion. Saute 5 minutes.
- Add ground turkey and separate with spatula. Cook 5 minutes, stirring occasionally. Stir in chili powder, paprika, cumin and garlic powder.
- Add broth, tomatoes and pumpkin. Bring to boil and reduce heat to low. Simmer 10 minutes. Add kidney beans and simmer 3 minutes.

Cook time: 26 minutes

- 1 1/2 pounds shell pasta
- 3 tablespoons unsalted butter
- 2 teaspoons minced garlic
- 1 tablespoon fresh chopped sage
- 4 ounces cream cheese, cubed
- 2 cans (15 ounces each) Green Giant 100% Pure Pumpkin
- 2 cups whole milk
- 2 1/2 cups freshly grated sharp cheddar cheese
- 2 1/2 cups freshly grated gruyere cheese
- 2 teaspoons Dijon mustard
- 1 teaspoon salt
- 1/4 teaspoon cracked black pepper
- Cook pasta according to package directions. Drain pasta when al dente, about 8 minutes.
- In large skillet or Dutch oven over medium heat, heat butter. Add garlic and sage; saute 1-2 minutes, until garlic is lightly browned. Add cream cheese and pumpkin. Heat until cream cheese is melted and stir to combine.
- Gradually stir in milk, cheddar and gruyere. Stir in Dijon mustard, salt and pepper. Heat until cheese is melted and sauce is creamy, about 3 minutes.
- Fold in cooked pasta.
